lb Old Creek Ranch grassfed ground beef

sweet onion, chopped
- olive
oil for sautéing

cups of seasonal vegetables, sliced or chopped

fresh garlic, to taste

black pepper, to taste

teaspoon freshly grated ginger to taste

cups milk
- 3
cups shredded cheese of your choice
Preheat
oven to 350 degrees. Brown ground beef, drain
fat and set aside. Sauté onions in small amount
of olive oil until soft, add fresh vegetables, garlic,
pepper and ginger and sauté about 5 minutes. Remove
from heat and set aside. In large bowl, lightly
beat eggs until blended. Stir in milk and salt.
Reserve ¼ cup cheese and mix remainder of cheese with
vegetables and beef into egg mixture. Stir into
greased 2-quart baking dish and sprinkle top with reserved
cheese. Bake at 350 degrees in oven for about
35 to 40 minutes or until knife inserted in middle comes
out clean.
